Universal Print from a Mac is Black and White Only

Hello fellow Mac Admins. At work we are exploring Microsoft Universal Print for a field office. The office is majority Mac, small population Windows. The printer is an HP LaserJet ColorFlow E87660 which is on the compatibility list. Everything appeared to go as planned. We've deployed Universal Print from the App Store using Jamf, all the Macs have it. The HP printer natively supports Universal Print, the printer is registered, the share created, and users have permissions to use it. Windows of course is easy mode, I've auto deployed it from Intune and tested on the clients. Which took about 15 minutes start to finish. Macs users on the other hand can sign in to Universal Print, they have to search for the printer as others have reported its not automatically listed. Not a big deal. And they can add the printer. What doesn't work only on the Macs is color printing. The print preview renders in B&W, they print in B&W, there are no options to print in color. The printer settings appear to be using an AirPrint driver? We've removed and reinstalled the printer from the Macs, they are fully up to date, running the latest version of Universal Print and the symptom persists. All while the Windows users get a good laugh. Has anyone run into this? I'm going to open a Microsoft support case in the morning.
